Description

This delightful Prosciutto and Goat Cheese Crostini appetizer combines savory-salty prosciutto with creamy-tangy goat cheese, sweet honey, and fragrant basil, all atop a perfectly toasted crostini.Ā 


Ingredients

Scale

For Crostini:

1 French baguette

1/3 cup olive oil

salt and pepper

Crostini Topping:

10 oz goat cheese, room temperature

6 oz prosciutto (about 8 slices)

1/3 cup honey

8 large basil leaves (about 1/4 cup), cut into thin strips


Instructions

Prepare Crostini

  1. Preheat oven to 350Ā°.Ā  Using a pastry brush, coat a baking sheet with a thin coating of olive oil.
  2. Slice the baguette into 1/3 inch slices and arrange on an oiled sheet pan.
  3. Brush the tops of the sliced crostini with a light coating of olive oil. Season with salt and pepper.
  4. Bake crostini for 10 minutes. Remove from oven and carefully flip crostini. Return to oven and continue to bake for 10-12 minutes or until golden brown and crisp through. Cool crostini before use.

Assemble Crostini:

  1. Remove goat cheese from the refrigerator and allow it to come to room temperature to soften.
  2. Spread goat cheese 1/4 inch across crostini.
  3. Tear the prosciutto into strips and place one strip on top of goat cheese.
  4. Drizzle honey on top of crostini
  5. Garnish with sliced basil, and serve immediately

Notes

  1. Remove the goat cheese from the refrigerator 30 minutes before use and allow it to come to room temperature. This will soften the cheese and make it easier to spread on crostini.
  2. If using a convection oven, reduce cooking time to 7 minutes before flipping the crostini and check often. Convection ovens can accelerate cooking time.
